The dining room can look ready for tomorrow while the back door is propped open and a leaking bin is waiting by the kitchen. A useful closing check follows the last movement of food, dishes and waste. It should be short enough that the person locking up actually uses it.
Walk the last delivery and waste route
Check that the receiving door closes, food containers are shut and spills have been dealt with in accessible areas. Look at the collection point after the last bag goes out. Record a broken lid, wet patch or gap as a specific task: where it is, who will handle it and when it will be checked again. Do not move heavy equipment or reach into unsafe spaces for the sake of a checklist.
Leave a record the morning shift can use
Keep pest sightings separate from cleaning jobs. Write the time and exact location, and attach a photo if it can be taken safely. A note such as “small roach at the ice-machine base at 10:40pm” is more useful than “bugs again.” Give the service provider that record, including what staff cleaned or repaired afterward.
A common question
Does a clean closing check replace pest service?
No. It gives inspection and monitoring better information. Ask how recurring findings will be reviewed and which corrections need the restaurant’s staff or maintenance contractor.
